The Formulas

Celsius → Fahrenheit

°F = (°C × 9/5) + 32

Fahrenheit → Celsius

°C = (°F − 32) × 5/9

Fan Oven Conversion

Fan °C = Conventional °C − 20

Understanding Gas Marks

Gas marks are a temperature scale used on gas ovens in the UK and some Commonwealth countries. Each gas mark corresponds to a specific temperature, starting at Gas Mark ¼ (110°C) up to Gas Mark 9 (240°C). They're incrementally spaced: each whole number represents roughly a 14°C (25°F) increase.

Fan vs Conventional Ovens

Fan ovens (also called convection ovens) use a fan to circulate hot air throughout the oven. This means food cooks more evenly and often more quickly. The standard conversion rule is to reduce the temperature by 20°C when converting from a conventional recipe to a fan oven.

For example, if a recipe says “bake at 180°C”, use 160°C in a fan oven. You may also need to reduce the cooking time by about 10%.

Is Your Oven Accurate?

Most home ovens are off by 25–50°F (15–30°C). The temperature dial might say 180°C, but the actual temperature inside could be significantly different. This is one of the most common causes of baking failures.

Frequently Asked Questions

What gas mark is 180°C?
Gas Mark 4 is approximately 180°C (356°F). This is one of the most common baking temperatures, used for cakes, biscuits and many other recipes.
What is gas mark 5 in celsius?
Gas Mark 5 is approximately 190°C (375°F). In a fan oven, use 170°C. This is a moderately hot temperature, commonly used for roasting vegetables and baking pastries.
What is gas mark 5 in a fan oven?
Gas Mark 5 (190°C conventional) converts to 170°C in a fan oven. Fan ovens are more efficient, so you reduce the temperature by about 20°C.
What is gas mark 6 in celsius?
Gas Mark 6 is approximately 200°C (400°F). In a fan oven, use 180°C. This is a hot temperature used for roasting meat and baking bread.
What is 220°C in gas mark?
Gas Mark 7 is approximately 220°C (425°F). This is a hot oven temperature, ideal for roasting potatoes, Yorkshire puddings, and pizza.
What is 450°F in gas mark?
Gas Mark 8 is approximately 450°F (230°C). This is a very hot oven temperature used for high-heat roasting and bread baking.
What is the difference between fan oven and conventional oven temperatures?
Fan (convection) ovens circulate hot air, cooking food more evenly and efficiently. As a general rule, reduce the temperature by 20°C when using a fan oven compared to a conventional oven recipe. So 180°C conventional = 160°C fan.
What temperature is a moderate oven?
A moderate oven is typically 160–180°C (325–350°F), or Gas Mark 3–4. This is the temperature range used for most baking recipes.
What is gas mark 4 in centigrade?
Gas Mark 4 is approximately 180°C (centigrade). In a fan oven, use 160°C. This is the most common baking temperature for cakes and biscuits.
What is 400°F in gas mark?
Gas Mark 6 is approximately 400°F (200°C). This is a moderately hot to hot oven temperature, commonly used for roasting.
