Professional bakers always measure by weight, and here's why: a cup of flour can vary by up to 30% depending on how it's measured. Scooping directly from the bag compacts the flour, while spooning and levelling gives a lighter cup.
With a kitchen scale, 125g of flour is always 125g of flour — no variation, no guesswork. This consistency is especially important in baking, where small differences can affect the final result.
